Answer: they physically touched the patrons at some point during the meal. Picture touchinga customer on the upper arm while asking, "How's the food?" Of course, you have to be careful about who and where you touch (a handshake is usually safe). It appears that in our techno-automated, cyber-society most people still appreciate - and are willing to pay extra for - service with a personal touch.
