Upselling is tremendously profitable - when your timing is right. A waitress once tried to upsell me on a) the size of my drink, b) a premium brand, and c) adding guacamole to my quesadillas. This is before I've eaten; when I'm hungry, and the least receptive to being sold to. Better to avoid mini-upsells altogether and go for one substantial upsell later when you have trust. The business owners had obviously tried to train the staff themselves. Appears to me that they got exactly what they paid for. I didn't go back.
